Since my diet is so limited I have been really bored over my selection of beef, beef or did you want beef again!


My neighboring vendor, Bon Vivant at the Olney Farmer’s & Artist Market sells Grass-fed meats. Of course we have our own….BEEF!
But he also sells Rabbit. The only Rabbit I’ve eaten was once in Williamsburg some 20 years ago. I remember it being absolutely delish! I tried to recreate that dish for Easter the following year. As we all recall that was a total disaster!!!
I’d followed the recipe to the T, but my source of Rabbit was iffy. They were so old and so tough! I can still fall on the floor laughing over my poor MIL politely spitting her rabbit into her napkin and excusing herself from the table. Then I heard her in the bathroom gagging!!!!! Still makes me crack up!!!
The rabbit we ate last night was nothing of that dish! It was tender and for me tasted like……you guessed it, Chicken!
After cutting it up, I browned it in a little fat, then added water to cover. I cut fresh Rosemary and Thyme and crushed fresh garlic. Adding some small tomatoes and fresh parsley, I cooked it over a low flame for 1.5. I mashed up some fresh Yukon Gold Potatoes from East Rivendell Farm with fresh garlic that I grew. Pan fried a little Okra and steamed some broccoli!
Perfect meal! And I sucked every last bone of that Rabbit!
