I’m In Love With La Chevre

You’ve gotta wonder, “what is it that the ethnics know about food, that we long time Americans don’t?” Really. What?

When I spent time in India, I ate goat. I didn’t love it on my first trip. But I loved it, along with many other foods on my second trip! But like all meat in India, it is prized. They aren’t privileged to eat it daily like many Americans do. Maybe like we might do.

Since La Chevre is our newest harvested meat, we’re trying it all. And since I’ve got it right out the door, we’re trying it all. We came to the conclusion that since we love it so much, we’ll be keeping 1 of the larger buck boys for our own use.

If you have a chance to buy La Chevre you should. In my opinion, it has a far better taste than lamb. It’s lean, it’s tender, it’s delicious!!!:)

First I heated tallow, then threw in 1 onion chopped and 4 cloves garlic chopped. Browned the shanks as well as I could. Then added 1 Qt of my home canned tomatoes. Broke up 1 cinnamon stick, added 6 whole cloves, 3-4 dashes of ground nutmeg. 1 Bundle of fresh herbs…rosemary, sage, parsley, thyme. Cook for 3 hrs over med low heat and watch if water is needed to keep from scorching.

The bones are filled with marrow and I’ll be cooking them down further for bone broth!!!:)Oh YUM, I’m truly in food heaven!!!

Brings back memories, my parents use to raise goats for meat and I remember liking it very much. Enjoy that La Chevre.
