Zucchini Ganoush

I saw this recipe on FB the other day for Zucchini Spread and knew it was something I’d want to try with all the Zucchini I have this year.

And as usual I didn’t measure, I just poured and chopped. You really can’t go wrong with this….I mean, it’s just EVOO, Zucchini and Garlic for the most part! My little Herb Garden

It took the good part of an hour to soften completely on a medium low heat. I had plenty of EVOO that I added 1 Tbsp of Lard to since I am allergic to dairy. I make that substitute all the time and it works perfectly.

Anyway, as I continued to smash it started resembling Baba Ganoush! Love that stuff!

I soaked up any remaining oils with my sourdough bread and toasted it in the HOT pan.

Then I spread the warm Zucchini Ganoush on the yummy garlicy, olive oily bread…..

AND…..OH……….

as you expected…….YUM! YUM! YUM! I mean, it was really good! Better than any Baba Ganoush I ever had!

So, I’m thinkin’ that I can make this up and freeze it. It ought to work.

The thing is…it didn’t taste like Zucchini! Not a bit. Give it a try, I know you’ll LOVE it!
