Bonny Clabber

I used 1 gallon of our fresh skimmed milk from making butter the other day and look at this beautiful Bonnie Clabber!

After stirring in 2 probiotic capsules to get it going, I set it in a “warmer” spot in the house to do it’s thing…. this is the most beautiful Clabber I’ve ever made. It was jelled and thick all the way through.

When I fed it to the ladies, they hollered “Fowl” until they took a taste. Then they hollered, “every girl for herself!!”

Of course Clabber can and is used for human consumption…but since I’m deathly allergic to dairy, and I’m the only one in this house who would touch this stuff….well, it looks like the Old Ladies are feasting on it for now. It’s packed with protein and can take the place of grain or allowing you to cut back on grain.

Bonny Clabber was brought to the Appalachians by the Scots and in France it’s similar to Creme Fraiche! In Germany it’s called Quack….I mean Quark!!!;)Of course my ducks are the ones that call it Quack!!!

Kelly, I have to use a dairy free brand and the only one that seems to work well for me is, New Chapter Probiotic All-Flora..I used 2 capsules just in case the house environment wasn’t conducive.

What kind of probiotic capsules did you put in it? I love clabber/yogurt. I don’t like the sweetened “crap” you get in the store. Lucky hens!

Yes, Nancy, it’s very similar to yogurt. But also different. Just like you have sour cream, cream cheese, creme fraiche…etc. It’s just another fermented dairy filled with wonderful beasty yeasties!
