Wild Sea Scallops Pack a Punch

For the lack of anything really interesting to share……

Here’s what I had for dinner the other night.

I love the vibrant colors. We still have a lot of peppers in the garden. I need to pickle some more, but we just love them fresh. Hopefully with the ability to be able to breathe now, I can get my greenhouse up and save a plant or two so we can have Sweet Jimmy Nardello peppers all winter long.  For now they’re in a canopy bed! I hung a row cover over the peppers just in case we get a killing frost. We did have our first frost over the weekend, but gratefully it did no harm. I am playing with time right now and I am so looking forward to getting outside again.

I tossed in a few scallops, brussels sprouts & broccoli, and a little fermented soy sauce, some fermented fish sauce and Mmmm. Served up with some Kimchi for gut health and this is one powerful meal. I served it on a bed of leftover rice noodles and it was soooo deeeelish!

Although the Malaria/Babesia or Lyme for that matter, has not relapsed, I still eat to boost my body and immune system and that is how I keep them in check . Wild Sea Scallops are high in the important B’s, Omega 3, iron, calcium, zinc, copper, phosphorus, selenium, magnesium and potassium. With only 26 calories for 2 large Scallops.

They sound like a real power house of nutrients to me.

I found some really great Kimchi at the Asian Market….seems I can’t stay away from there.

Many, many, many years ago I tried and did not like sea scallops. Your meal looks so good that I might have to give them another chance. I love that you added kimchi to the mix.:)
